The Tucker Box

This classic, satisfying sauce is delicious tossed with cooked wholemeal pasta. It's just as good spooned over a baked potato.



Ingredients

  • 1 x 3 second spray of Always Fresh Olive Oil Extra Virgin Olive Oil Spray
  • 1 medium onion, finely chopped
  • 1 whole fresh carrot, peeled, finely chopped
  • 3 clove garlic, crushed
  • 600 g extra lean beef mince
  • 800 g canned tomatoes
  • 1/4 tsp chilli powder, (or to taste)
  • 1 tbs fresh basil, finely chopped
  • 1 whole stock cube, (beef), dissolved in 1 cup (250ml) boiling water
  • 500 g cooked pasta, (preferably wholemeal)

Method

  1. Spray a large non-stick frying pan with oil and place over medium heat. Add onion, carrot and garlic and cook, stirring, for 5 minutes or until onion is soft.
  2. Add mince to pan and cook for 5 minutes or until browned, breaking up clumps with a wooden spoon.
  3. Stir in tomatoes and season with salt and pepper. Add chilli powder and basil and bring to the boil. Reduce heat to low and simmer for 10 minutes to allow flavours to blend and sauce to thicken. Spoon sauce over hot spaghetti and serve.

Notes

If you can't buy wholemeal pasta or prefer ordinary pasta, use it instead. The sauce is just as delicious either way. Any leftover sauce can be stored in an airtight container in the fridge for 2-3 days and actually improves in flavour with time. It is also suitable to freeze for up to 3 months.



Dinky Di Sausage and Veggie Rolls


Ingredients

  • 1 packet frozen puff pastry
  • 1 roll sausage mince
  • ½ cup BBQ sauce
  • 1 cup grated vegetables of your choice
  • 1 cup Grated cheese

Method

  1. Lightly grease oven tray.
  2. Mix all ingredients together.
  3. Take small spoonfuls of mix and place it down one side of the pastry.
  4. Roll the pastry up until it resembles the shape of a log.
  5. Cut this log into lengths you would like it to be, brush the top with milk.
  6. Place the sausage rolls into oven until brown at 180 degrees.

These can be frozen for up to a month



Fruit smoothie


Ingredients

  • Fruit- ½ cup of your choice
  • Milk- approx ½ cup
  • Yoghurt- ¼ cup

Method

Combined all ingredients together and blend and serve.
We often include the children in making the fruit smoothies.



Fresh tomato sauce and vegetable sauce


Ingredients

  • Garlic 1 teaspoon
  • Table spoon of oil
  • 1 cup tomato paste
  • 4 cups of chopper vegetables of your choice

Method

  1. Cook chopped onions and garlic and small amount of oil until cooked
  2. Add veggies and tomato paste
  3. Add 4 cups of water and cook until veggies are tender
  4. Blend in blender
